St Patrick’s day is almost here, and everyone turns to corn beef and soda bread. Well, I think cupcakes. My Irish element is Guinness beer in the cupcakes. This plays nicely with the cocoa and sweetness of the cream cheese frosting. Hope you like it.
4 oz butter
5 oz Guinness (drink the left over)
4 oz fine sugar (I had to grind my own)
4 oz dark cocoa powder
1 cup flour
1/4 teaspoon salt
1 teaspoon baking soda
1/3 cup sour cream
Preheat oven to 350
Mix dry ingredients in bowl:
Flour, salt, cocoa, and baking soda
In another bowl:
Cream together sugar and butter and beat until fluffy
Add sour cream and whip for 1 minute
Add Guinness and whip for 1 minuets
Add dry ingredients into wet ingredients, one third at a time, and mix until no wet ingredients are evident
Line cup cake pans with paper liners
Bake for 20-24 minutes or until a toothpick comes out clean; let cool for 20 minutes and remove from pans
Chocolate Ganache:
1/2 cup chocolate chips
1/4 cup of cream
Combine cream and chocolate chips
Place in microwave oven for bursts of 20 seconds and stir until chocolate is combined and smooth.
Pour over cooked cupcakes; let set for 15 minutes before frosting
Frosting:
4 oz cream cheese
4 oz butter softened
1/2 teaspoon vanilla
Pinch of salt
2 to 2 1/2 cups powdered sugar
10 drops green food coloring
Whip with beaters cream cheese and butter
Add powdered sugar 1/2 cup at a time; mix until smooth — you are looking for a consistency of smooth and creamy
Add food coloring; beat until it’s a constant green color
Cover cupcakes with frosting
