On our anniversary, we decided to go pick some strawberries, and then we got some rhubarb from the farmers’ market. So strawberry rhubarb pie. It’s kinda like what do you do in berry picking. It’s self-explainatory Hope you like it.
2 pounds cleaned stemmed strawberries
2 pounds peeled trimmed rhubarb
1 1/4 cups sugar
2 teaspoons cinnamon
3 tablespoons butter
3 tablespoons lemon juice
2 pie crusts
Make sure rhubarb is skinned and strawberries are cleaned and husked
Cut strawberries in half
Cut rhubarb in 3/8 inch pieces
In a large bowl add strawberries and rhubarb
Add lemon juice
Add sugar
Add flour
Add cinnamon
Mix all ingredients with your hand until everything is incorporated
Preheat oven to 350
Pre- cook bottom crust for 10 minutes
Let cool for 15 minutes
Add filling
Add top crust (I prefer a lattice, but you be you)
Bake for 50-60 minutes until crust is golden brown
