I love my not-so-local Wegmans. I can find a lot of things that make me think about new food experiments. Like blood oranges. I used them in a Cuban dish a while back, but now how about baking? Some cupcakes would be nice. Here is the result of the experiment.
Dry ingredients:
1 cup flour
1 teaspoon baking powder
1/8 teaspoon salt
1/2 cup cocoa powder
1 teaspoon blood orange zest
Wet ingredients:
1/2 cup canola oil
3/4 cup sugar
1/2 cup coffee
Zest of 1 blood orange
2 tablespoons blood orange juice
1 teaspoon orange liqueur
Frosting:
2 sticks butter
3 to 4 cups powdered sugar
1 teaspoon orange liqueur
2 to 3 tablespoons of milk
2 teaspoon orange zest
1 pinch of salt
Preheat oven to 350.
In bowl 1, mix flour, cocoa powder, salt, baking powder, and orange zest.
In bowl 2, mix oil, coffee, sugar, orange juice, and orange liqueur.
Mix bowl 1 into bowl 2.
Place cupcake liners in cupcake tins.
Scoop batter into liners 3/4 full.
Bake 16-20 minutes.
Frosting – Cream butter and milk.
Add powdered sugar a little a time.
Add zest and orange liqueur.
Mix until smooth.
Top cupcakes with frosting.
