Peach Cookies

I love peaches in season. They are now in season, so let’s use them in a tasty cookie. Lots of cinnamon with juicy peach pieces. I hope you like it.

1 cup butter
1 cup sugar
1/2 cup packed brown sugar
1 egg
1 teaspoon vanilla
1/2 teaspoon peach extract
3 cups flour
1 teaspoon cream of tartar
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon pumpkin pie spice
1/4 teaspoon salt
1 cup chopped peaches
1/4 cup brown sugar
1/4 cup white sugar
1/2 teaspoon cinnamon

Preheat oven to 350.

In bowl one cream butter, sugar, and brown sugar for 4 minutes.

Add vanilla, peach extract, and egg; mix until incorporated.

In bowl 2 mix flour, cream of tartar, baking soda, salt, cinnamon, and pumpkin pie spice.

Mix bowl two into bowl one in three installments; mix until no flour is showing.

Fold in peaches to batter.

Drop 1 1/2 inch scoops of dough on parchment- lined baking sheet.

Mix brown sugar, sugar and cinnamon and sprinkle on cookies.

Bake for 10-14 minutes or until golden brown.
