Cherry Crisp

As a kid you could sit me down with bowl of cherries, and I would be a happy boy. I love when cherries are in season, and I have been using them a lot. That brings me to this dish; when people think of crisps, apples usually come to mind. I decided to switch it up and use fresh cherries. Sweet and sour with just a hint of cinnamon with a crunchy topping. I hope you like it.

16 ounces pitted fresh cherries
1/2 cup sugar
1/2 cup brown sugar
1 teaspoon cinnamon
2 teaspoons lemon juice
1/4 cup flour
1 tablespoon corn starch
Topping:
1/2 cup plus 2 tablespoons flour
1/3 cup white sugar
1/3 cup brown sugar
1/3 cup butter

Preheat oven to 350.

Pit cherries.

In a bowl add cherries, sugar, brown sugar, and cinnamon.

Mix flour and cornstarch.

Add flour to cherries mixture and add lemon juice.

Make topping: Add flour, brown sugar, and sugar; cut in butter until all ingredients are like a wet sand.

Add cherry mixture to oven-safe ramekins.

Top with crisp topping.

Bake for 30 minutes.
