This is the last of my waiting-for-my-new-house series of recipes. I can’t wait for my new kitchen where I will use my air fryer by choice, not necessity. The air fryer is a great tool in a larger arsenal and not for every job, or so I thought. I made one with fresh zucchini from the local farmers market for my wife. The basket size limits you to two servings, but since there were only two people, things worked out. The bottom line is that you can make lasagna in the air fryer. I hope you like it.

2 3 x 5 foil pans
1 16-ounce jar marinara
4 ounces Parmesan cheese
8 ounces ricotta cheese
2 teaspoon Italian herbs
1 egg
4 ounce cooked Italian sausage
4 sheets of no cook pasta sheets or zucchini planks
4 ounces mozzarella cheese

Add cooked sausage to marinara.

In bowl mix ricotta, egg, Parmesan, and Italian herbs with whisk.

Assembly:
2 tablespoons marinara
2 tablespoons ricotta mixture
Lasagna noodles to fit (but not too tight)
2 tablespoons marinara
2 tablespoons ricotta mixture
Lasagna noodles to fit (but not too tight)
2 tablespoons marinara
2 tablespoons ricotta mixture
Lasagna noodles to fit (but not too tight)
Top with mozzarella
Add foil to close

Heat air fryer to 370 for 10 minutes.

Add lasagna tins to basket.

Air fry for 25 minutes at 370; remove foil and air fry for an additional 10 minutes.

Serve.
