Chai Green Tea Sugar Cookie

This cookie will remind you of a tea house with a relaxing cup of chai tee. Sweet, earthy, and loaded with warm spices like cinnamon, allspice, ginger, clove, and pepper. Matcha gives this cookie its unique green hue and earthy flavor. At its heart, this is still a holiday sugar cookie which explains why it is painted as the Grinch. I hope you like it.

2 1/2 cup flour
1/4 cup matcha
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
1 teaspoon clove
1 teaspoon allspice
1 teaspoon ginger
1/4 teaspoon black pepper
1 cup butter
1 3/4 cup sugar
1 egg
1 teaspoon spiced rum (vanilla can be substituted)

Your favorite icing like milk and powdered sugar. See what my wife did in the photos!

Preheat oven to 375.

In bowl one mix flour, baking powder, baking soda, and salt, and stir with fork until combined.

Add cinnamon, clove, allspice, ginger, and pepper.

In bowl 2 cream butter and sugar for 3 minutes or until smooth.

Add egg and beat until combined.

Add rum and beat for 30 seconds.

Add bowl 1 to bowl 2 in three installments, and beat until flour is combined.

Use cookie scoop to make slightly larger than a silver dollar disks.

Bake for 9 -11 minutes.

Ice as you wish.

Serve.
