Stone Fruit Parfait

This is simple, fun and tasty trick when you don’t have the energy to make something fancy. It is an elegant looking dessert, and you don’t have to tell anyone all your cheats. So enjoy a little more summer fruit and warm weather.

1 pound cake, cut into one-inch cubes

1 cup whipping cream beaten into stiff peaks

2 cups (combined)fresh nectarines, peaches, and plumbs, sliced

2 tablespoons sugar

1 ounce tequila

2 tablespoons lemon juice

1/2 teaspoon cinnamon

Mix fruit, juice, cinnamon, tequila and sugar.

Refrigerate for 2 hours (longer is better).

Beat whipping cream until stiff peaks form.

Assembly:

Whipped cream

Pound cake

Fruit mixture

Whipped cream

Pound cake

Fruit mixture

Top with whipped cream

Garnish with fruit and or mint
