Rum Raisin Muffins

This is a brunch muffin. This is also something your Granda would make. Old time flavors rum, raisins, cinnamon maple all bring something to the party. I hope you like it.

1/2 cup butter softened
3/4 cups Sugar
2 eggs beaten
1 1/2 teaspoon rum extract
1 1/2 cups flour
2 teaspoon baking powder
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/3 cup heavy cream
1/4 cup maple syrup
1 cup raisins plus 1/2 cup warm water soak together

Possible addition 1/2 cup chopped pecans

Preheat oven to 350

In bowl one add flour, baking powder, backing soda and cinnamon

In bowl 2 cream butter and sugar until smooth

Add eggs and beat for 2 minutes

Add cream, maple and rum extract and beat for 2 minutes

Add flour mixture in three parts until all the flour is incorporated

Add raisin water mixture and mix (pecans could go in now)

Spray muffin tins with non stick spray

Full muffin trays 2/3 full

Bake for 18-22 minutes or until a toothy comes out clean

Serve with butter
