Aronia Glaze

I was asked by Erin’s Elderberries to make a glaze out of Aronia jelly for pork and chicken. Challenge accepted. After trying the jelly, I thought sweet with a little heat and some acid. But I wanted simple, too, ingredients that most folks have in the kitchen. Well, you should add Aronia to your pantry. It has a berry flavor that is similar to raspberry but more so. When turned into a jelly, it’s tart and great in sauces or right on toast and English muffins.

5 ounces Aronia jelly (from Erin’s Elderberries)
1/4 cup apple cider vinegar
1/4 cup Coconut Soy substitute or soy
1/2 teaspoon chipotle pepper
1/2 teaspoon salt
1/2 teaspoon pepper

In a sauce pan on medium low heat, add Aronia jelly, vinegar, and soy. Cook until combined.

Add salt, pepper, and chipotle and reduce by 1/3.

Serve over pork or chicken.
