Lime Cream Cheese Cookies

A summer cookie, light and refreshing. Full of lime juice and lime zest. Then there is cream cheese in both the cookie and frosting. I hope you like it.

1 stick butter
4 ounces cream cheese
1 egg
1 cup sugar
2 tablespoons lime juice
1 tablespoon lime zest
1 teaspoons vanilla
2 cups flour
1 teaspoon baking powder
Frosting
2 tablespoons butter
2 tablespoons cream cheese
1 teaspoon lime juice
2 teaspoons lime
1 1/2 cup powdered sugar

Preheat oven to 350.

In bowl 1 add flour and baking soda. Mix.

In bowl 2 cream butter and cream cheese. Add sugar and mix.

Add egg and vanilla and beat for 1 minute.

Add lime juice and zest and mix.

Add bowl 1 into to bowl 2 in three installments.

Make dough into 1 1/2” inch balls and place on parchment-lined sheet; refrigerator for 30 minutes.

Bake 10 -12 minutes. Let cool.

In a clean bowl mix butter, lime zest, and lime juice.

Add powdered sugar. Beat until smooth.

Frost cookies.
