Bermuda Fish Sandwhich

This is a dish served everywhere in Bermuda. With the love of fresh fried fish, sweet and savory things, this beloved dish was something I wanted to try. I used some fresh sole because it will lay flat on the bread. Toast some cinnamon bread, and top that with cheddar cheese. Next we add fresh tartar sauce and some refreshing slaw. I hope you like it.

1 pound sole fillets
1 cup flour
1 tablespoon cornstarch
1 teaspoon Old Bay seasoning
1 teaspoon pepper, divided
1 cup milk
1 cup corn meal
1 teaspoon Old Bay Seasoning
4 slices of cinnamon bread
4 slices cheddar cheese
1/2 cup cole slaw
1/4 cup tartar sauce
8 jalapeño slices

Use three pie pans and set up a dredging station.

Pan 1: add flour, cornstarch, OldBay, and half of the pepper.

Pan 2: add milk.

Pan 3: add corn meal, Old Bay, and half of the pepper.

Heat pan to medium with 1/4 inch cooking oil.

Dip sole in pan 1 flour, then in milk, and then in corn meal.

Add fish to pan and cook until crisp on both sides, about 6 minutes per side.

Toast bread.

Assembly:
Spread tartar on one side of each piece of bread.
Add cheese to bread
Add fish
Add cole slaw
Add jalapeños
Top with bread
