Corned Beef Hash

This is a dish that people eat at diners all over America. A simple dish that is simple to do and simple to mess up. (Some of the best is at a diner in Mackinaw City.) My first rule: don’t use the canned meat stuff; make your own corned beef and use the leftovers, or get some good deli corned beef. Corned beef, potatoes, onions, bell peppers, and some spices all topped with a runny egg. I hope you like it.

1 pound diced potatoes
1/2 pound corned beef, diced
1 yellow onion, diced
1/2 red pepper, diced
1 teaspoon paprika
1/2 teaspoon black pepper
1 teaspoon garlic powder
1/2 teaspoon salt
Over-easy eggs

Oil for cooking

Heat skillet to medium. Add oil.

Add potatoes, onions, and peppers; cook until brown, stirring every minute or two.

Add paprika, salt, garlic powder, and pepper.

Add corned beef.

Cook until a crust forms on bottom. Turn over.

To serve top with a over-easy egg.
