Carrot Salad

Old school cookout side dish. The only thing I didn’t use was the Miracle Whip. We have carrots, apples, golden raisins, with a tart, creamy sauce. This is a make-ahead dish that will look new because it’s so old. I hope you like it.

3 cups shredded carrots
1 cup golden raisins
1 cup diced Granny Smith apples
Dressing:
3/4 cup mayonnaise
1/4 cup white vinegar
1 tablespoon honey
1 teaspoon lemon juice
1 teaspoon cinnamon
1/2 teaspoon salt

In a large bowl add carrots, raisins, apples, and lemon juice. Mix all ingredients.

In a second bowl add mayonnaise, salt, vinegar lemon juice, honey, and cinnamon. Mix.

Toss dressing with carrots.

Refrigerate for 2 hours.

Serve.
