Kate’s Hot Chocolate Waffles

Kate is my grand niece. She is smart, athletic, and a lot of fun. Kate also loves chocolate. I promised that I would do a dish for her. I know she loves chocolate, so we needed a chocolate delivery system, and I decided waffles. We deliver the chocolate in two methods: in the waffle and in the chocolate fudge topping . Now, since we need a little protein because Kate is so active, I put a couple of strips of bacon in the waffle itself. Like whole strips of bacon. The amount of leavening makes the rise really high. I hope Kate likes it. I hope you do too.

1 pound favorite bacon (Hayfield Farm)
Dry ingredients:
2 cups all purpose flour, sifted
1/4 cup cocoa powder
1 tablespoon baking powder
2 tablespoons sugar
1 teaspoon baking soda
1/2 teaspoon salt
Wet ingredients:
2 cups milk
1 eggs, beaten
1 teaspoon vanilla
Topping:
1/4 cup whipped cream
1/4 cup chocolate syrup
1/4 cup caramel

Cooking spray for waffle iron.

Cook bacon until crispy.

Mix flour, cocoa powder, baking powder, baking soda, and salt. Whisk to combine.

In second bowl add milk, eggs, and vanilla and whisk.

Combine milk bowl with the flour bowl and mix until just combined.

Let rest for 20 minutes. This means you, Mike.

Heat waffle iron.

Coat with cooking spray.

Add 1/2 cup batter to waffle iron.

Add 2 strips of cooked bacon. Top with 1/2 cup waffle batter.

Cook cook for 3 minutes then flip waffle iron.

Cook until done. These will be the worst of the bunch. Repeat until all batter is used up.

Top waffle with chocolate sauce and toppings including bacon.
