Kombucha Fish and Chips

I have used kombucha in a cranberry recipe a few years ago, but I haven’t used it since. My bad. I was speaking to Mad Magic Kombucha, and I decided to try it with a fish and chips recipe. Not everything is a good idea, but this one works. The lemon thyme funky flavor brings a sour punch to the classic dish. Now, I also air fried it for a lighter taste. I didn’t want to hide the kombucha. I also replaced the lemon juice in the tartar sauce to reinforce the kombucha. I hope you like it.

1 1/2 pounds fresh cod (Crosby’s Crabs)
1/2 teaspoon salt
1/2 teaspoon pepper
1 3/4 cup flour
1/2 cup rice flour
1 teaspoon Old Bay seasoning
1/2 teaspoon pepper
1 teaspoon rosemary
12 ounces Mad Magic Kombucha lemon rosemary
1 ounce vodka
Tartar sauce:
1/2 cup mayonnaise
1 tablespoon Mad Magic Kombucha lemon rosemary
1 tablespoon capers
1 tablespoon sweet pickle relish
1 teaspoon black pepper

Cooking spray.

Season fish with salt and pepper.

Mix flour, rice flour, Old Bay, pepper, and rosemary.

Divid flour into 3 pie pans: 1/4 dry pan 1, 1/2 pan 2, and 1/4 dry pan 3.

In 1/2 pan 2, add Kombucha until a smooth batter is formed. Add vodka and stir.

Dip fish in dry pan 1 and coat.

Dip fish in wet pan 2 and coat.

Dip fish in dry pan 3 and coat.

Add to air fryer and cook at 360 for 5 minutes.

Tartar sauce – mix mayonnaise, kombucha, capers, relish, and black pepper.

Cook fries to package directions.
