Bourbon Pecan Peach Cookies

It is peach season, and the Warrenton farmers market had a bunch last weekend. Buy local, buy seasonal. Peaches, brown sugar, and bourbon, what a combination. Oh, I forgot the spicy pecans; a little crunch is alway good, and the cayenne pepper makes sure all your taste buds get involved. With the bourbon, it’s like a 60 proof pecan sandie. I hope you like it.

3 cups flour
2 teaspoons baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon allspice
1 cup butter
1/2 cup brown sugar
1 cup table sugar
2 eggs
1 teaspoons peach extract
(Two teaspoons vodka, 1 peach cut into pieces refrigerated overnight)
1 teaspoon bourbon
Peaches used in the vodka diced
1/2 cup sweet and spicy pecans from The Purposeful Pecan

Heat oven to 350.

Mix flour, baking soda, salt, cinnamon and allspice in a bowl.

In second bowl cream butter, brown sugar and white sugar.

Add eggs and mix for 2 minutes.

Add peach extract and bourbon and mix.

Add flour bowl into butter bowl in three installments.

Add peach pieces and mix.

Add pecans and mix.

Scoop 1 1/2 inch balls on a parchment-lined baking sheet.

Bake for 11-14 minutes.

Let cool. Serve.
