Loco moco is a classic Hawaiian dish considered comfort food. Rice, hamburger patty, an over easy egg, maybe some kind of green, and always some gravy. I have made sure I will never be invited to Hawaii with my changes on the dish. The rice is not going to be invited to the party today. We’re going couscous, ham, pineapple, and Romano cheese, so sorta kinda not really mainlander and not really Hawaiian style. It’s a crazy loco mixed-up world. I hope you like it.
2 6-ounce ground beef patties
Salt and pepper to taste
1 cup couscous
1 cup water
1 tablespoon olive oil
3 ounces chopped ham
3 ounces diced pineapple
8 ounces chopped frozen collard greens
10 ounces beef gravy
2 over easy eggs
Bring water to boil; add salt and oil. Stir in couscous; remove from heat and cover; let sit for 5 minutes.
Add chopped ham and pineapple.
Salt and pepper burgers; add to grill.
Heat collards in microwave.
Heat gravy.
Cook eggs to over easy.
