This is a summertime cookie. What more do you need? I hope you like it.
2 cups flour
1/4 teaspoon salt
1/2 teaspoon cardamom
12 ounces butter
3/4 cup sugar
2 tablespoons Meyer lemon zest
2 tablespoons Meyer lemon juice
1 teaspoon elderflower syrup (Erin’s Elderberries)
Preheat oven to 350.
In bowl 1 mix flour, salt, and cardamom.
In bowl 2 cream butter and sugar.
Add lemon juice, elderflower syrup, and zest and beat.
Roll out dough to 1/4 inch thick; cut into preferred shapes.
Bake for 11-13 minutes or until bottom is brown.
Let cool for 30 minutes.
Glaze
1 tablespoon Meyer lemon zest
1 tablespoon Meyer lemon juice
1 teaspoon elderflower syrup Erins Elderberry’s
1 /2 – 3/4 cup powdered sugar
Mix all ingredients.
Glaze cookies.
