I did a banana version of this recipe a while back but was thinking why not chocolate? So how to make it more puddiny? Cream cheese replaces 1/2 the butter; cocoa powder and espresso make chocolate taste better. Lastly, I add hazel nuts to deliver some crunch. I hope you like it.
Dry ingredients:
3 cups flour
1/2 teaspoon salt
1 1/2 teaspoons baking powder
Wet ingredients:
8 ounces cream cheese
8 ounces unsalted butter
8 ounces sugar
3.4 ounces instant chocolate pudding mix
2 teaspoon chocolate vodka
1 teaspoon espresso powder
6 ounces chocolate chips
6 ounces macadamia nuts, chopped
In bowl 1 mix flour, salt, and baking powder.
In bowl 2 add butter and cream cheese and mix until combined.
Add sugar and cream with butter/cream cheese mixture.
Add chocolate pudding mix and mix.
Add vodka and espresso powder and mix.
Add bowl 2 into bowl 1 mixing in three parts and beat after each addition.
Add chocolate chips and hazel nuts and mix to incorporate.
Refrigerate dough for 25 minutes.
Heat oven to 350.
Scoop dough on parchment- lined baking sheet.
Bake for 13-15 minutes.
Let cool.
Serve.
