Chicken Fried Steak Burritos

A man’s reach should exceed his grasp, or what in heaven’s name am I thinking? I’ve done many a mash up, but this is outrageous, and delicious. We combine cube steak, breaded and fried, home fries, onions, and you gotta have a little cheese, covered in white gravy. Then I add just enough pico de gallo to make sure it still qualifies as a burrito under the international burrito treaty. All making for a hearty breakfast. I hope you like it.

2 8-ounce cube steaks
6 ounces flour
1 teaspoon garlic powder
1/2 teaspoon salt substitute
1/2 teaspoon paprika
1/2 teaspoon onion powder
8 ounces cooked cubed potatoes
1/4 onion, diced
Salt and pepper
1/4 cup shredded cheddar cheese
2 burrito wrappers
1 cup white gravy (packaged is fine)
1/4 cup pico de gallo

Oil for cooking

Heat oven to 350.

In a pie pan mix flour, garlic powder, onion powder, salt, paprika, and pepper.

Heat skillet to medium and add oil to coat.

Add potatoes and onion; add salt and pepper.

When potatoes brown on bottom, turn and brown on other side. When brown on both sides remove from heat.

Heat white gravy in a small sauce pan.

Heat skillet to medium high. Add oil.

Dredge steaks in flour twice and coat thoroughly.

Add coated steak to pan and cook for 4 minutes per side.

Let rest for 5 minutes then cut in strips lengthwise.

Microwave tortilla for 15 seconds.

Baking dish
Tortilla
Steak
Potatoes
Cheese
Wrap enchilada
Top with white sauce
Add cheese
Bake for 10 minutes until cheese melts
Add pico de gallo
