Pina Colada Cookies

At its core, this is pineapple, coconut (both shredded and vodka) and rum. Ok, there is some butter, flour, and sugar. The glaze is simply coconut vodka and pineapple juice. So put on your flip flops, watch out for that pop top. (RIP Jimmy Buffet, summer never ends in heaven.) I hope you like it.


3 cups flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 stick butter
1/2 cup crushed pineapple with juice
10 ounces sugar
2 large eggs
1 teaspoon coconut vodka
1 teaspoon rum

In bowl 1 mix flour flour, baking powder, and salt.

In bowl 2 cream sugar, butter, and pineapple until smooth.

Add eggs, rum, and vodka and mix.

Refrigerate dough for 30 minutes.

Heat oven to 375.

Scoop cookies on a parchment-lined baking sheet.

Bake for 11-13 minutes.

Let cool.

Glaze:
1/2 cup powdered sugar
2 tablespoons pineapple juice
1 teaspoon coconut vodka

Mix all ingredients.
