Triple Onion Burger

I met the owner of Brickyard Bulls at the Long Market at Stafford Farmers Market, and her ranch grows waygu beef. She recommended that I try the burgers which sounded great. I decided I wanted something to play off the richness of the beef. I decided on onions, with onions, and of course onions. I should explain: onion powder mixed with salt and pepper, sliced onions to press the burger in and griddle it, then topped with onion rings. Now, the reason this worked was the richness and beefy flavor of the waygu. Top with some cheese from Village Cheese Works and fried green tomatoes (I said I was at the farmers market). I hope you like it.

2 4-ounce patties
1/4 teaspoon onion powder
Salt and pepper to taste
1/2 yellow onion, sliced thin
4 ounces Atoka cheese from Village Cheese Works
6 onion rings, cooked
4 fried green tomato slices (recipe on the blog)
4 tablespoons chick-filla sauce
Oil for cooking
4 strips bacon

2 Brioche buns

In a skillet on medium heat add oil and onions. Cook until slightly brown.

Add onion powder, salt, and pepper to both sides of beef patties.

Place patties on top onions and press.

Cook patties for 5-6 minutes. Flip burgers over cook for 7 minutes or until beef is 150 degrees.

Add cheese to burger, add water to pan,and cover skillet. Cook for 4 minutes.

Assembly:
Bottom bun
Chick-fil-a sauce
Green tomato slice
Burger with cheese
2 onion rings
Bacon
Top bun with chick-fil-a sauce
