It’s fall and time to switch to fall foods. I wanted to try a fish version of the classic. Green peppers have a strong flavor, so I chose salmon which can stand up to the pepper. I added Alfredo sauce, capers, dill, and Gruyère cheese to balance the flavors. I hope you like it.
1 pound salmon (Atlantic or king)
1/2 yellow onion, diced
2 ounces capers
1 teaspoon dill
1 teaspoon lemon pepper
2 cups cooked quinoa
1 cup Alfredo sauce
1 cup grated Gruyère cheese
2 green peppers
Heat oven to 350.
Chop salmon into pieces.
In a bowl add salmon, capers, onion, dill, and lemon pepper. Mix well.
Add Alfredo and quinoa and mix.
Remove tops and seed peppers.
Fill green peppers with salmon mixture.
Place in a oven-safe dish, top with cheese.
Bake for 50-55 minutes.
Serve.
