Cudighi Sandwhich

This is unique Yoopers food. It’s hearty, stick-to -your-ribs food for the iron ore mining people in the cold Upper Peninsula of Michigan. It starts with an Italian sausage patty with marinara sauce, mozzarella cheese, and herbs served on toasty bread. I hope you like it.

1 pound Italian sausage
1 cup marinara sauce
1 teaspoon Italian herbs
1/2 cup mozzarella
4 slices of sourdough bread
Butter

In a skillet on medium heat make a smash burger patty. Brown on both sides. Cut into fourths.

Toast bread and butter.

Add mozzarella to top of each patty and top with sauce. Cook until cheese melts.
