I have done a couple of takes on the iconic “Kentucky Hot Brown.” This one has a burger at its core. Turkey burger base and a potato roll instead of the classic white bread. I didn’t forget the bacon, Mornay sauce, and the tomato slices, and since it is a burger, it has to have some onion. I hope you like it.
1 pound ground turkey (7-10% fat content)
4 slices crispy bacon
3 plum tomatoes, sliced in 1/2 inch slices
1 red onion, sliced in 1/4 inch slices
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/2 teaspoon chili powder
3 tablespoons flour
3 tablespoons butter
1 cup milk
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon nutmeg
4 ounces Gruyère cheese, grated
8 slider potato buns
Make four patties. Sprinkle with salt, pepper, paprika, and chili powder.
In a sauce pan melt butter and add flour. Whisk until smooth. Cook for 4 minutes. Add salt and pepper. Whisk until smooth and let thicken.
Add milk and nutmeg. Whisk to incorporate.
Add cheese and whisk. Whisk until smooth.
Grill burgers – it’s turkey and needs to be well done.
Assembly:
Bottom bun
Bacon
Turkey patty
Tomato slice
Onion
Mornay sauce
Top bun

So yummy!

Yes it is. I went to my first Derby in 1975 win 250 on foolish pleasure.
