Simple preparation but the steps are important. Quality ingredients are also required. If the fish isn’t fresh the juice isn’t worth the squeeze. Pesto will bring out the flavors of both the fish and the bacon. I hope you like it.
1 pound monk fish fillets
Salt and pepper
1 8 ounce jar pesto
4 strips of bacon
Heat oven to 400.
Cook bacon for five minutes in a skillet
Salt and pepper the monk fish.
Coat outside of fish with pesto.
Wrap in bacon.
Bake for 25-30 minutes until bacon is browned.
