Many people feel that a cook out isn’t complete without potato salad. In Hawaiian cookouts have macaroni salads or egg salads. This is all three in a bowl. Now the genius because each family does it differently so to quote Forest Gump you never know what your going to get. Potatoes, elbow macaroni, eggs, green onion, mayo, mustard and in my version avocado and some hot sauce. I hope you like it.
1 1/2 cup pasta bow tie
3 potatoes boiled peeled and diced
2 diced hard boiled eggs peeled and diced
1/2 cup frozen peas thawed
1/4 cup green onion diced
1 cup mayonnaise
1/4 cup Dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup bacon Hayfield Farms
8 ounce can pineapple tidbits water drained
Paprika to top.
In a large bowl add cooked pasta, potatoes, eggs, peas, salt, pepper, and stir gently.
Add bacon, mayonnaise, green onion and mustard and stir.
Top with paprika.
Refrigerate at least 3 hours.
Serve.
