Tomato Basil French Toast

At a Friendsgiving I acquired some tomato basil bread. My brain said, “Oh, oh – savory French toast.” Then those around me said, “How would you do that?” I said, “I have no idea.” Here are the flavors I thought about: salty bacon, tomato, balsamic, basil with something for some sweetness like honey. Also, some cheese and some everything Italian seasoning. I hope you like it.

8 slices tomato basil bread
8 ounces milk
4 eggs
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon basil
6 strips bacon
4 plumb tomatoes seeded and diced
1/2 yellow onion diced
2 cloves garlic minced
1 tablespoon every thing Italian spice
4 ounces grated parmesan cheese
2 tablespoons balsamic vinegar
1 tablespoon honey
Salt and pepper to taste
4 tablespoons butter
1/4 cup powdered sugar

In a skillet cook bacon until crisp and remove to a paper towel.

Add onions and cook until slightly brown.

Add tomatoes and cook for 4 minutes. Add garlic and herbs; cook for 3 minutes.

Add bacon, balsamic, and honey, and cook until liquid is reduced by half.

In a pie pan mix eggs, milk, salt, and pepper.

In a second pie pan mix parmesan cheese and the everything Italian spice mix.

Dip bread into the egg mixture and leave for 1 minute per side.

Then dip in parmesan mixture.

Add butter to griddle on medium and let melt to coat griddle.

Add coated bread to griddle and cook until brown on each side, about 4 minutes.

Top with bacon tomato sauce and top with powdered sugar.
