Not your average thumbprint cookie with the addition of cookie butter and chocolate mousse. A different take on a classic holiday treat. I hope you like it
12 ounces butter, melted
3/4 cup powdered sugar
1 teaspoon vanilla
1/2 teaspoon salt
1 3/4 cup flour
3 tablespoons cookie butter
1 egg
3 tablespoons heavy cream
1/2 cup chocolate mousse (on the blog)
1/2 cup chocolate morsels, melted.
Heat oven to 350.
Mix flour, sugar, and salt. Whisk it until combined.
Stir in melted butter, vanilla and egg and mix.
Refrigerate for 1 hour.
Make a ball with 1 1/2 dough ball and make a dent with thumb.
Place on parchment-lined baking sheet and bake for 9-11 minutes.
Let cool; add 1/2 teaspoon of mousse to each cookie. Top with drizzle of melted chocolate.
Serve.
