I will own up to my cooking mistakes. I have had Christmas cookies not turn out. I could hide the evidence in the trash, or I could use them in a parfait. I choose a parfait. Now, pistachio pudding would add a nice green color, and pistachio nuts would add crunch. All layered nicely with some whipped topping. I hope you like it.
2 cups rejected Christmas cookies
1 cup whipping topping
1 tablespoon powdered sugar
2 packages pistachio instant pudding
4 cups milk
1/4 cup pistachios out of the shell
Make pudding per package directions.
Crumble Christmas cookies.
Add bottom layer of cookies to serving dish.
Add layer of pistachios (shelled, duh).
Add layer of pudding.
Add layer of whipped topping.
If you want repeat cookies, pistachios, pudding and whipped topping.
Refrigerate for 30 minutes.
Serve.
