Susie Q Baked Cod

This is a throwback for the restaurant my mom managed for 30 years back in Royal Oak. They were know for their fish and chips, but they sold a lot of baked cod on Fridays. Now, I asked my brother, who was a cook at Susie Q, what the recipe was for it. My brother’s memory is somewhat spotty (except if you asks him about a 1960’s western tv show), but my recipe made sense to him. I got a firm, “Yeah, that sounds about right.” So with minimal confidence, here is what the recipe might have been. I hope you like it.

2 pounds cod
1 stick butter, melted
8 ounces seasoned Panko bread crumbs
1 teaspoon Old Bay seasoning (I’m sure they used seasoning salt, but I used Old Bay)
1/4 cup onions, diced fine
1 teaspoon parsley

Heat oven to 350.

Dip cod in butter on both sides.

In a pie pan add bread crumbs, Old Bay, parsley, and onions.

Roll one side of cod in bread crumb mix.

Add to a foil-lined sheet pan,

bread crumb side up. Double over tail pieces to make sure all the fish is equal thickness to ensure even cooking.

Bake for 20-22 minutes.

Serve.
