Chorizo is one of my favorite ingredients to use. I take it out of the casing and use it in bulk form, in this case as a burger. Now, this is a burger that has a lot of south-of-the-border flavors, and that makes you a wiener because you never sausage a thing ( from a billboard on I 95 is SC.) Chorizo, cheese, a fresh spicy mango pico de gallo, sour cream on a brioche bun. So spicy, sweet, sour, herby flavors in every bite. I hope you like it.
1 pound chorizo
4 slices cheddar cheese
4 brioche hamburger buns
1 mango, diced
1/2 red onion, diced
2 diced plumb tomatoes
2 tablespoons cilantro
1/2 cup cooked sweet corn
2 tablespoons lime juice
1 pinch salt
1/2 teaspoon black pepper
1/2 poblano pepper, diced
1/4 cup crema
In a bowl add mango, onion, tomatoes, corn, salt, pepper, and lime juice. Let sit for 30 minutes.
Make 4 patties and grill.
Add cheese to burger. Let melt.

Crema
Chorizo patty with cheese
Pico de gallo
Crema
Top bun
