This is a submission from my sister-in-law, A. J. This came from the cabin in the woods nestled deep beneath the pines in northern Michigan. Now, the key to this recipe is the order of the assembly and the treatment of the cheese and egg yolk. After flipping the eggs, break the yolk and add some cheese. I understand that the sausage is crumbled up north, but I like the patty idea better, so that’s what I did. An everything or plain bagel will work best – no sweet strawberry maple here. I hope you like it.
2 everything bagels
2 sausage patties
4 tablespoons cream cheese
2 eggs
4 ounces grated cheddar cheese
2 dashes hot sauce
1 teaspoon chives
Cook sausage patties.
Toast bagel.
Cook eggs over easy; after flip, break yolk and add cheese.

Bagel
Cream cheese
Sausage
Egg
Hot sauce to taste
Chives
Bagel
