Meyer Lemon White Chocolate Pancakes

My neighbor gave me some Meyer lemons (yes – she grows them inside), so I felt pancakes would be a great flavor delivery vehicle. To balance the tartness, I added some white chocolate and blueberries . I replaced the buttermilk with whole milk and the Meyer lemon juice to make home made buttermilk – just more Meyer lemon flavor. I hope you like it.

1 1/2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1 tablespoon sugar
1/4 teaspoon salt
2 eggs
1 1/4 cup whole milk
1/4 cup Meyer lemon juice (about 3 lemons)
1 tablespoon Meyer lemon zest
1 cup white chocolate chips
3/4 cup blueberries

Cooking spray or butter.

Butter and syrup.

In bowl 1 mix flour, baking powder, baking soda, salt, zest, and sugar.

In bowl 2 add milk, juice, eggs and mix.

Add milk egg mixture to flour mixture and stir to just combined. 

Add blueberries and white chocolate and let rest for 20 minutes.

Heat griddle to 350 or skillet to medium high.(My dad always used cast iron with bacon grease.)

Spray with cooking spray.

Add 1/4 cup batter to skillet leave room between pancakes.

When bubbles pop on pancakes, check for brownness, flip, and cook on other side.

Cook remaining batter.

Serve with butter and syrup.
