Seafood Spinach Pappardelle

At the Warrenton Farmers Market, I got there early enough so I could get in on the fresh pasta. Pasta Ilgatto was there and brought seven kinds of pasta and five kinds of sauces all of which were mouth watering. I went with some spinach pappardelle which was excellent. I got some seafood mix to complement it with clams, scallops, mussels, shrimp, and lobster. To round things out, lemon, tomato, wine, lots of garlic, tomatoes, and shallots. I didn’t forget the herbs and parmesan cheese. I hope you like it.

16 ounces spinach pappadelle (from Pasta Ilgatto)
6 cloves garlic, minced
2 shallots, minced
6 ounces white wine
1/4 cup lemon juice
1 15-ounce can diced tomatoes
Salt and pepper
12 tablespoons butter
1/4 cup parmesan cheese
1 teaspoon Italian herbs
1 teaspoon Everything Italian seasoning

Bring large pot of water to boil with 1 tablespoon of salt.

In a large skillet add 8 tablespoons of butter, garlic, and shallots and cook until translucent. Add wine.

Add tomatoes, Italian herbs, and everything Italian seasoning and cook for 6 minutes.

Add seafood and cook until done (until shrimp turn pink and seafood is tender).

Add parmesan cheese and remaining butter. Stir.

Boil pasta for 3 minutes, drain, and add to seafood sauce.

Combine.

Serve with parmesan cheese.
