Reuben Empanada

I decided to have New York travel to Korea and then stop in Central American. All the things you love about the Reubens but with some Korean kimchi kick. Lean corn beef, melty Swiss cheese, and some thousand island dressing all in a crispy dough shell. Now, I know that there is no rye bread, but pizza dough will do. The Reuben is usually a two-handed sandwich, but now you have a hand free for a drink. Bad Ass Pickles will be the pickle on the side and in the empanada. I hope you like it. 

1 can pizza dough
8 ounces corned beef
6 ounces Swiss cheese
4 ounces kimchi
4 teaspoons eggs wash
Thousand Island dressing for dipping
4 dill pickle spears from Bad Ass Pickles (2 chopped and 2 whole)

Pre-heat oven to 350.

Roll out pizza dough in 6-inch rounds.

Add 1 ounce corned beef, 1 ounce cheese, kimchi and pickle to taste allowing room to fold over.

Fold over dough and crimp to seal.

Coat outside with egg.

Place on a lined baking sheet.

Bake for 22-25 minutes until golden brown.

Serve with thousands island dressing.
