Followers of this blog may remember that my Aunt Margie and Uncle George had a restaurant in Greektown Detroit. I found some gyro meat in bulk quantities at Costco, so I plan on doing a number of Greek inspired recipes. Kinda like when I binged on cookie butter and elderflower syrup. So, a gyro egg roll must have tomatoes, lettuce, feta, cucumber, red onions, gyro meat, and a tzatziki dipping sauce. Now, I added some fresh mint and air fried these crunchy. Here is a warning: let these cool a couple of minutes coming out of the fryer or serious mouth burns will happen. I hope you like it.
12 ounces gyro meat
1 teaspoon oregano
4 ounces feta
4 ounces chopped cherry tomatoes, diced
4 ounces chopped cucumber
4 ounces red onions, diced
2 ounces Napa cabbage
1 tablespoons mint, chopped
4 egg roll wrappers
Water for wrapping
In a bowl add gyro meat, oregano, onions, tomatoes, cucumber, cabbage,and mint and mix.
Add mixture to bottom 1/3 of the egg roll wrapper while in a diamond shape.
Wet outside rims of wrappers. Wrap tight folding in the sides.
Spray egg roll with cooking spray.
Air fry for 6 minutes per side at 380 until crispy.
