Here is a Lenten idea for Friday morning breakfast. I had some leftover smoked salmon from another recipe and used it in this recipe. The chives add a needed break from the smokeyness of the fish, and the black pepper, creme fresh, and caviar make it super savory. The cheese keeps it moist and brings a sharp note. I hope you like it. Maybe jalapeño next time.
2 cups flour
1/4 teaspoon salt
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 cup smoked salmon, flaked
3 ounces cheddar cheese, grated
2 teaspoons chives
6 tablespoons cold butter, grated
7 ounces buttermilk
1/2 teaspoon black pepper
2 teaspoons hot honey
or
1/4 cup creme’ fresh
2 teaspoons caviar
Heat oven to 400.
In bowl add flour, salt, baking powder, chives, and baking soda and mix.
Add smoked salmon and cheese.
Add grated butter and mix with hands until combined; add buttermilk and mix.
Mix into a ball and kneed folding over itself 8 times.
Roll to 1 inch thick. Cut into 2 1/2 inch rounds. Top with fresh black pepper.
Place on parchment-lined baking sheet.
Bake for 15-17 minutes until golden brown.
Top with hot honey or creme’ fresh with caviar.
