Ruben Quiche

This is a way for me to use up St. Patrick day leftovers. There is the corned beef, the cheese, the cabbage in the form of kimchi. Topped with thousand island dressing and a rye bread French toast. I hope you like it.

6 eggs
4 ounces whole milk
6 ounces corned beef cut in cubes
4 ounce Swiss cheese
4 ounces kimchi from the Kitchen by Chefs and Foodies
1/2 teaspoon black pepper
8 slices rye bread
4 ounces butter
1/2 cup thousand island dressing

Heat oven to 350.

Coat 5 x 5 casserole dish with butter.

Beat milk and egg with pepper.

Line casserole dish with rye bread.

Add bread to line.

Add corned beef and kimchi.

Add Swiss cheese.

Add egg mix.

Top with bread.

Bake for 1 hour or until egg sets.

Top with thousand island, serve.

I know it looks like a hot mess but the flavor is there.
