I saw this on Food TV and as per usual made some changes. This starts with a sour cream dill schmear, a potato pancake base, then some smoked salmon. A poached egg joins the party, then a chive hollandaise sauce is introduced and then topped with some salmon caviar. Kinda like New York deli meets local dinner. I hope you like it.
Potato latke
2 large potatoes grated water removed with with paper towel.
2 tablespoons chives
2 tablespoons parsley
2 eggs beaten
2 tablespoons flour
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon garlic powder
1/2 teaspoon paprika
Oil for cooking
Everything else
8 ounces sour cream
1 tablespoons dill
8 ounce smoked salmon not lox
1 package hollandaise sauce
1 teaspoon chives
1 jar salmon caviar
4 eggs for poaching
Grate potatoes and place in a cheese cloth or paper towel lined colander to wring water out.
Add potatoes to a bowl, add chives, parsley, garlic powder, salt, pepper, and paprika; stir ingredients together.
Add flour and egg and mix.
In a skillet on medium add oil to coat bottom.
Add heaping tablespoon of batter to pan.
Cook until brown on both sides. Remove to a paper towel to drain.
Make hollandaise per package directions. Add chives.
In a large skillet 3/4 full with water, add tablespoon of white vinegar.
Add eggs; stir a circle around each egg to help set and stay together.
When egg is cooked and stays together but is not hard cooked (about 3 minutes), remove to a paper towel.
Mix sour cream and dill.
Assembly:
Schmear of sour cream and dill
2 Potato pancakes
Smoked salmon flakes
Hollandaise with chive sauce
Add caviar
Serve
