This is something for those who like gross and disgusting but flavorful bombshells. The savory chicken livers, tart pickles, spicy bbq sauce, earthy greens all piled on some sourdough bread. I hope you like it.
1 pound chicken livers, cleaned
8 ounces rice flour
8 ounces flour
1 teaspoon Old Bay
1 teaspoon garlic powder
1/2 teaspoon black pepper
Oil for cooking
4 slices sourdough bread
4 ounces spinach
4 tablespoons mayonnaise
4 tablespoons BBQ sauce
4 ounces pickles planks
Heat oven to 350.
Clean fat and veins from livers.
Mix rice flour, flour, Old Bay, garlic powder, and pepper.
Dredge livers in flour mixture making sure they are coated well.
Line baking sheet with foil. Place liver on pan.
Spray with cooking oil.
Bake for 20-24 minutes until temp is 165.
Remove to paper towel.
Assembly:
Bread
Mayonnaise
Chicken livers
Pickles
Spinach
BBQ sauce
Bread

Can’t say I wouldn’t try it, but I prefer rumaki or chopped chicken liver.

I like those too. But I did this for a farmer friend. They did their first batch of chickens last week
