Italian Ricotta Cookies

A classic Italian cookie. Simple to make. A great lemon flavor. If my sentences get any shorter, I am definitely sounding like Tarzan. I hope you like it.

1 stick butter
1 cup sugar
2 teaspoons vanilla
1 teaspoon lemon zest
1 egg
6 ounces ricotta cheese
2 cups flour
1/4 teaspoon salt
1 teaspoon baking soda
2 cups powdered sugar
1 tablespoon lemon juice
1 teaspoon lemon zest
1/4 cup milk

Heat oven to 350.

Cream butter and sugar together for 4 minutes.

Add ricotta and mix until combined.

Add egg, vanilla, and one teaspoon lemon zest and mix until combined.

In bowl 2 add flour, salt, and baking soda.

Add bowl 2 to bowl 1 in three parts.

Mix until combined.

Drop tablespoon of dough onto a parchment-lined baking sheet.

Bake 12-14 minutes.

Let cool.

Mix powdered sugar, lemon juice, and remaining zest.

Add milk until the mixture is the desired consistency.

Glaze cookies.

Serve.
