Air Fryer Scotch Egg

This is a British classic; it is served in pubs, and it is also a much sought after brunch fare. This is a dish with a lot of steps that can wrong, so you have to pay attention all the way through. There is the soft boiled egg, sausage, the bread crumbs, all deep fried so the egg doesn’t over cook. Then we have to make sure the sausage cooks so you don’t serve raw pork. I hope you like it. This was a bucket list cooking item.

4 soft boiled eggs
1 1/2 pound sage sausage
1 cup rice flour
4 eggs, beaten
2 tablespoons milk
1 cup seasoned panko breadcrumbs
Oil for frying or air fryer

Boil eggs for 6 minutes to soft boiled but firm enough to crack and peel. It took me three tries, two undercooked, 1 overcooked.

Add to ice bath to stop cooking.

Peel eggs.

Make a sausage disk large enough to cover eggs. Cover each egg completely.

Roll eggs in rice flour.

In separate bowl add beaten egg and milk and mix then add coated eggs.

Roll in Panko and coat completely.

Spray with cooking spray and add to air fryer.

Cook for 13-15 minutes.

Serve.
