Biscoff Pork Loin

You know the cookies you get on an airplane instead of real food. They make a great crust on a pork loin. This is a simple recipe, with only 4 ingredients. Technique is everything. Make sure the seer is good, and this comes out golden brown and delicious. I hope you like it.

1 pound pork tenderloin
1/2 cup teriyaki sauce
1 1/2 cups Biscoff cookies
1 teaspoon black pepper

Oil for cooking.

Heat oven to 350.

In a plastic bag add teriyaki and tenderloin.

Bring tenderloin to room temp, about 15 minutes.

Crush cookies to fine.

Coat tenderloin in pepper.

Roll tenderloin in cookies and cover completely.

Heat large skillet to medium and add oil.

Add tenderloin and brown on all sides for 3 minutes.

Place in oven for 15-20 minutes or until internal temperature is 135-140.

Let rest for 10 minutes.

    Dan, I bought USDA Choice Rouladen. It is a very thinly cut meat. Looks good. Any suggestions on how to prepare this? I was thinking of a roll up with a good cheese inside. Any ideas?

    1. That works. A spinach filling is good. If could be mistaken but that is part of the round. So pounding and marinating might be good or even a Swiss steak preparation would work.
