Egg Plant Egg Roll

I like unusual and I like one handed food. I found some great eggplant at the farmers market so I planed to make eggplant parm then the egg roll wrappers called me. I combined two ideas and put seasoned eggplant and cheeses inside to dip in a marinara sauce. I hope you like it.

1 pound peeled eggplant diced
1 teaspoon Italian herbs
2 teaspoons fresh basil
8 ounces Italian cheese blend
10 ounces marinara divided
6 egg roll wrappers
Olive oil for cooking

Heat skillet to medium and add olive oil.

Add egg plant and Italian herbs and basil.

Cook until soft.

Add to wrapper 2 tablespoon eggplant, 1 tablespoon cheese and 1 tablespoon of marinara and eggplant.

Wrap egg roll seal with water.

Add to air fryer and spry with cooking spray.

Air fry for 7 minutes per side.

Heat marinara in microwave.

Serve.
