I saw this online and thought I would give it a try. The original needed some fresh herbs, so they were added to the final. Wine and butter are classics with fish; the cauliflower rice and asparagus and zucchini make the dinner healthier. I hope you like it.
1 pound flounder
1 teaspoon Old Bay seasoning
2 teaspoon salt substitute
1 teaspoon garlic powder
8 tablespoons butter, melted
4 ounce white wine
12 ounces cauliflower rice
3/4 pounds asparagus
1 shallot, diced
1 tablespoon parsley
1 teaspoon tarragon
2 lemons, sliced
Aluminum foil
Heat oven to 350.
Lay out two large pieces of foil.
Place 6 asparagus in middle of each package.
Add cauliflower rice to each package.
Add 2 tablespoons butter, 1 teaspoon salt substitute, 1/2 teaspoon garlic powder.
Add 8 ounces of fish to each package.
Add wine to each fish.
Add butter, Old Bay, parsley, remaining salt substitute, lemon slices, and tarragon on each package.
Loosely close each package allowing steam to escape.
Bake for 25 minutes.
