Shortcut Bananas Foster Beinets

I’ve been feeling like a New Orleans brunch lately. To me beignets and bananas Foster scream the “Big Easy.” As you know I cheat when I can when doing a big meal. In this case the use of a beignet mix from the Cafe’ DuMond. I can make them; this is just Dan proof since I can’t screw around with the recipe. Then we add brown sugar, bourbon, vanilla, butter, cinnamon , and bananas. The flavor combination is classic and works well together. I hope you like it.

2 cups Cafe’ DuMond beignet mix
7 ounces warm water
6 tablespoons butter
2/3 cup packed brown sugar
1 teaspoon bourbon
1 teaspoon vanilla
1/2 teaspoon cinnamon
3 bananas cut in 1/8” rounds
1/4 cup powdered sugar

Spray for air fryer.

Mix beignet mix with water and mix until water is incorporated.

Make into a ball and roll out on a floured surface to 1/8”.

Cut into 24 beignets and place 8 in air fryer; spray with cooking spray and cook for 8 minutes at 370 degrees.

Repeat until all beignets are cooked.

In a skillet add butter, salt, and brown sugar; cook until it begins to boil. Add bourbon and vanilla and cook for 4 to 5 minutes.

Add sliced bananas.

Cook for 4 minutes.

Plate beignet; add sauce and bananas. Top with powdered sugar.
