Brisket Hash

I made a brisket and had some leftover, so I repurposed it and made a hash. I added some poblano peppers, hash browns, onions, and some cheese. Add some paprika, garlic and parsley, and you have some great hash. Smokey brisket, savory onions, spicy pepper, and creamy cheese. I hope you like it.

3 tablespoons cooking oil
32 ounces hash browns
16 ounces smoked brisket
1 onion, diced
1 poblano pepper, diced
1/2 cup bell pepper, diced
1 teaspoon black pepper
1/2 teaspoon salt
1 teaspoon Old Bay seasoning
1 teaspoon parsley
1/2 cup cheddar cheese
Eggs

Hot sauce if wanted

In a large skillet on medium heat add oil. Add onion and peppers; cook for 3 minutes.

Add hash browns and stir. Cook until they begin to brown. Cook until a crust begins to form, then turn over. Add more oil if necessary.

Add brisket, salt, pepper, and Old Bay.

Add parsley.

Add cheese.

Top with egg.

Serve.
