Wagyu Burger Wellington

Burger Wellington:
1 puff pastry sheet
2 6-ounce Wagyu beef patties
Salt and pepper to taste
4 slices American cheese
1/3 cup bread and butter pickles, chopped fine to duxell
2 beef steak tomato slices
2 slices red onion
1/4 cup ketchup
1/4 cup mustard
1/4 cup mayo
1/2 cup shredded cheddar cheese
1/3 cup milk
1/3 cup mozzarella cheese

Heat oven to 400.

In a bowl mix ketchup, mustard, and mayo.

Salt and pepper patties on both side.

Sear on both sides on medium heat, two minutes per side.

Let cool for 10 minutes.

Place in center of puff pastry.

Top with American cheese, pickle duxcell, and sauce mix.

Add onion and tomato on top.

Bring up sides of puff pastry to seal.

Make steam holes in top.

Brush with egg wash.

Bake for 30-35 until golden brown.

In a sauce pan add milk, cheddar cheese, provolone cheese. Cook until melted and combined.

Top burger with cheese sauce.

Serve.
